Monica prepares typical home-style dishes from Uttar Pradesh, a state whose cuisine has been greatly influenced by Mughal cooking techniques. The dishes commonly cooked include mutton (goat) and paneer (fresh cheese) redolent of rich spices such as cardamom and saffron. Learn to prepare authentic North Indian food with Monica in her local home. She lives with her family in a simple apartment just steps away from the architectural wonder of the Taj Mahal. Monica prepares typical home-style dishes from Uttar Pradesh, a state whose cuisine has been greatly influenced by Mughal cooking techniques. The dishes commonly cooked include mutton (goat) and paneer (fresh cheese) redolent of rich spices such as cardamom and saffron. Prepare and enjoy a traditional meal with the host while learning about Indian cuisine and culture.Learn to prepare an authentic North Indian meal with Monica. Your cooking lesson will take place at the dining table rather than in her kitchen due to space constraints. Using a portable cooktop, Monica will demonstrate how to dishes like chana masala (chickpeas cooked in her special spice mix), dal tadka (cooked lentils, tempered with oil or ghee, spices and herbs just before serving), jeera aloo (potatoes with cumin seeds) and boondi raita (yogurt served with gram flour fried balls). Some elements of the meal will be prepared in advance. 

During the cooler winter months, Monica will begin the cooking experience with a barbecue. You will learn how to marinate chicken and paneer (fresh Indian cheese) and cook it in a tandoor, an outdoor clay used for baking and cooking. Enjoy the meal you helped prepare with Monica while discussing Indian culinary and cultural heritage. Leave with new recipes, a new friend, and lifelong memories.
