Meet your guide in central Florence and, following a safety briefing, put on your helmet and hop on your hybrid, 24-speed bike — a cross between a road bike and a mountain bike. Then, set out on your small-group tour, following your guide out of Florence through the Porta Romana gate, the best preserved of the original city gates.

As you leave the city behind, pedal up a fairly steep 1-mile (2-km) hill, stopping to rest and enjoy the city views as you climb. Admire the grandiose villa that sits near the hilltop and hear how the site is the first of many aristocratic estates belonging to Florence's old noble families that pepper the surrounding hills.

Continue past leafy olive groves and vineyards, following roads with little traffic. Stop whenever you wish to take photos, and on route, hear interesting facts from your guide about local olive farming and olive oil making.

After a while, stop at a gorgeous Renaissance villa nestled in the hills that’s famed for producing wines and olive oils. Meet the winemaker host and tour the cellar where the wine is aged. Taste a selection of the produce, and enjoy a light, complementary Tuscan snack as your host describes the wine's characteristics.Typically, the snacks consist of bruschetta, crostini, cold cuts of meat and cheese.

Feeling rested, continue on your bike through more of Tuscany’s hills and villages. Pass the house where the astronomer Galileo Galilei once lived and absorb more of the idyllic scenery as you return to Florence. After a stop at Piazzale Michelangelo to soak up the panoramic city views, return to the original start point, where your tour finishes.

If you wish, mark the end of your tour with an ice cream (own expense) from a gelateria before saying goodbye to your guide.
